When choosing strawberry jam, preserves, or making your own, look for the “natural” whole berry fruit source or label. Store jams are often loaded with additional sugars, so finding a jar that’s no additional sugar is worth the effort.
Rule of thumb: the fewer the ingredients (for healthy and low-sugar), the better. And ingredients with long names are worth a pause to consider other alternatives.
And another healthy alternative is you can make these donuts gluten-free with buckwheat, coconut, tapioca, or all almond flour as a few gluten-free flour choices.
To compensate for the more crumbly gluten-free dough texture, add a little more coconut oil and/or honey to form a cohesive dough.
Also, a little (not too much) water will work if you don’t want to add any more sugar or fat.

Strawberry Matcha Donut - No Bake
Equipment
- silicone mold or cookie cutters (optional)
Ingredients
- 1 cup all-purpose flour or gluten-free substitute flour
- 4 tsp almond flour
- 4 tbsp honey
- 4 tbsp coconut oil, melted
- 3 tsp almond extract
- 4 tsp matcha powder
- 1 tsp matcha powder (for zhughing)
- strawberry jam
Instructions
- Add flour to a bowl. Make a well/hole in the middle.
- Add and combine honey, extract. and matcha powder to make the dough mixture. Easy tip: Combine with a spoon starting in the middle and moving out so the liquids are incorporated. Make another well.
- Heat or microwave coconut oil (for 20-30 seconds) into liquid (if not already). Add coconut oil to the dough mixture warm.
- Use spoon and fingers to make a dough. The dough should be a little wet and cohesive. The small pieces should stick together easily.
- Press into silicone mold (if using) or you can press into round cookie shapes of your choice without any mold. They should be easy to work with, roll into balls, or flatten into discs.
- Refrigerate for at least 20 minutes.
- Smear/glaze the top of your cookies.
- Dust with additional matcha powder. Add a a glaze if desired and/or enjoy!
