Choux is easy to make and is a a sweet combination any day with a breakfast yogurt, protein ricotta or cottage cheese, or ice cream for dessert. This one is stuffed with Greek yogurt and peaches, ready to pop in the mouth as bite size.
And these choux snack bites are so easy to make and bake.
Inside, you get a nooks and crannies center… and that makes for pockets to fill.
…You can let your flavor dreams run wild.
And if you don’t have one in mind, seasonal fruits always make for great pairings: like peach, lemon, and berries in summer.
And cooked apples and pears for fall/winter. You can also add your favorite jam.
Fruits are anti-inflammatory and loaded with Vitamin C, so whatever fruit you choose, you’ll be doing some healthy good.
Add cinnamon for extra daily anti-inflammatory points.
Choux small bites can be a good sweet medium for afternoon tea or as mini-breakfast English muffins.
You can also make eclairs wit the batter by piping long oblong strips on a baking sheet. Then you can fill the hollow-er inside with custard, and dip with chocolate on the outside.
So they could be small bite size snack or hand size.
But if you make larger choux buns, turn the oven temperature up (from the recipe below) to at least 375°F for part of the baking time, so they “bloom” in the oven.
The oven steam creates the inside air pockets, and the larger the pastry bake, the more help it needs heat for the steam to rise… think of it as like blowing up a balloon as one of the oven goals for a choux.
It’s easier to blow up a small size balloon than a larger balloon. You want them to pop inside.
And the result will be worth the heat and time.
Ah-choux! This will be a relief.
