Watermelon sherbet is a thirst-quenching dessert with very low calories, high fiber, and is loaded with anti-inflammatory Vitamin C, A, and lycopene antioxidants. Plus, it’s so easy to make with healthy ingredients.
Our bodies seek moisture in extreme hot and dry months that watermelon helps us with, as a juicy food. Watermelon used to be solely a summer or Independence Day dessert, as that’s when watermelons bloomed in the grocery store scene.
But these days, less juicy mini watermelon versions are available around winter and sometimes year-round, so you can make a watermelon sherbet practically anytime.
That doesn’t take away from watermelon’s special-ness. Because nothing can replace the bite of a watermelon that’s light, juicy, and crunchy.
They’re glorified melons and a bit like cucumbers you can find year-round, that can be substituted in a salad.
Leaning into those tastes, from my Mediterranean restaurant event planning days, one of my favorites is a homemade watermelon mint salad.
And using all of the watermelon, also enjoy the watermelon juice that’s healthy to drink!
Watermelon is a good source to hydrate our thirsty bodies. It’s a flavorful healthy drink variety compared to boring, plain water that already makes our daily glasses.
Watermelon juice can be a healthy substitute from reaching for a beverage loaded with sugar or empty calories, especially if we’re trying to stay low-calories and less sugar.
It also can cure our headache symptoms. Sometime we have a headache and it’s as simple as needing to hydrate. And since watermelons are 92% water, almost 8 ounces of watermelon will give you close to 8 ounces of water!
And if you have a daily coffee habit, cold brew coffee with watermelon or watermelon coffee is another tasty way. The taste is mellow, balanced, and favorable if you don’t prefer bitter coffee tastes.
And then with your leftover watermelon fruit, you can make this delightful watermelon sherbet.

Watermelon Sherbet Healthy Benefits
People who can’t eat acidic tomatoes (also full of lypcopene) can often eat watermelon that’s mostly water. And antioxidants Vitamins A and C in watermelon are great for an anti-inflammatory diet! Which btw, watermelon pairs well with guava (where both can be squeezed into a juice).
So now all you have to do is pickup your watermelon…
Watermelons are in abundance in American stores around Independence Day. 🇺🇸 And you know what that means… they are inexpensive, big, and juicy!
And there are some foods, like watermelon, that are irreplaceable for good food memories.
I bought one bigger than a baby and as wide as my hips for $4. That’s a nice bang for your buck 🎆
There were many to choose from with the green pattern and nice yellow field patch, which is the stamp of approval for a good watermelon that’s gonna be juicy and ripe.
And getting the watermelon baby home is a mission. 👶
It’s the biggest fruit most of us handle (and maybe why the watermelon bins are in the front of the grocery stores by the carts).
Since there is no handle on a watermelon, you’re best to just carry with two arms and hands out. It’s good to have helpers. Then when you get the pretty green design melon into your home…
With a big watermelon, you have plenty of opportunity to get creative with your watermelon leftovers, as so many food dishes and desserts can be made like a watermelon sherbet dessert.
We called this an amuse bouche to cleanse the mouth palate in between tastings when I planned events for Mediterranean cuisine DC restaurants and catering in hotels. It can be served in a bowl or glass but on its natural watermelon base is so much more fun! 🍉
It’s good for an event food table or weekend brunch. And so is fruit sorbet that you can add to glasses or serve pretty on individual plate bowls.
Make the Watermelon Sherbet in a Magic Bullet
You can make this simple everyday watermelon sherbet in minutes. Some tips if you’re using an ice cream maker are added in the recipe card. It’s like making a slushie.
But you can also use your easy Magic Bullet blender where you pulse the blender so that the watermelon and coconut cream combine together. You don’t want to blend because then you’ll have a smoothie, that’s not a bad idea either!…
And if you have a watermelon big size watermelon, you can scoop out more and make an accompanying watermelon smoothie with or without coffee infused.
But for watermelon sherbet, getting the smoother texture is important. You want to preserve the small chunks, and with coconut cream make a consistent mashed potatoes or homemade applesauce texture.
That makes for a refreshing dessert. Or an amuse bouche to cleanse the mouth palate. Easy Watermelon Sherbet - Dairy-Free Coconut Cream
Equipment
- ice cream maker
Ingredients
- 4 oz fresh watermelon
- 2 oz coconut cream liquid (dairy-free) - reduced, low-fat version
Instructions
- Freeze bowl that will be used to make the sorbet. If mixing by hand or blender like a Magic Bullet, freeze a freezer safe bowl. If using an ice cream maker, keep the ice cream bowl in the slightly warmer front of the freezer overnight before making the sherbet, so icicles don't form inside the bowl from room temp changes that can prevent the machine from churning.
- Crush watermelon with the back of a spoon.
- Add crushed watermelon to bowl or Magic Bullet blender first if using. Start churning with an ice cream machine, pulse several times with a Magic Bullet blender, or mix by hand in bowl until a smooth consistency. With ice cream machine, churn for about 10 minutes.
- Then add the coconut clear liquid with some partial liquid white parts. Save the flesh solid white coconut cream for ice cream or other desserts. Gently combine until a creamy smooth, but solid consistency. On a Magic Bullet, be careful not to blend.
- Freeze for 20-30 minutes (or longer). Enjoy!
