These are soft and you can make a low-sugar or healthy sugar version.
This recipe uses gluten-free and plant-based ingredients that’s great on any plant-based diet. They also make a great breakfast sweet as they have protein in both the egg white and yogurt filling.
For the meringues, instead of sugar, monk fruit sugar can be used to help stabilize the egg whites and give sweetness. It won’t be the exact same, but you’ll be happy you kept it healthy.
If you lean toward using more regular sugar than the recipe, the texture can improve but keeping it low-sugar will help bring out the plant-based taste flavors you add in.
And if you add no-sugar of any kind healthy or not, you will get foam like styrofoam so a little will be good.
Tip: For eggs, it’s easier to separate your eggs when they are cold or straight from the refrigerator.
If you want to make chocolate Whoopie pies 😋, you can add 1/4 cup cocoa in your meringues (and omit the Pandan gel). This will alter the texture to more of a softish brownie, but will be chocolate decadent.
Using raw cacao (especially 70% or higher chocolate) is healthy good.
You can also use black cocoa (that’s not more healthy) but gives a fun black and white chocolate sandwich taste like those O-ones most of us enjoyed!

Whoopie Pie
Ingredients
- 2 Egg whites
- 1/4 cup fine almond flour
- 1 drop Pandan gel
- 1/2 tsp sugar (or monk fruit sugar for healthy)
- 1/4 cup Greek yogurt (for filling)
- 1/2 cup almonds, finely chopped
Instructions
- With baking mixer, whip up egg white meringues (about 7 minutes on high-medium speed). Add in monkfruit sugar or sugar.
- Combine in almond flour and Pandan gel until consistent.
- Pipe mixture on baking sheet into circles (or use a mini scooper and tamp down tops). If the batter is too moist, then add a little bench or any flour to tops.
- Bake on 300°F for 12 minutes. Do not overbake. Tip: you can flip tops over to the bottom if edges begin to brown while the top isn't fully baked through. You can also use the top shelf of your oven to prevent burnt bottoms.
- Let cool. Make top and bottom Whoopie pie sandwich with Greek yogurt and decorate with chopped almonds. You can substitute for any chopped nuts or crumbs.
