Greek Yogurt Whoopie Pie

Ingredients

  • 2 Egg whites
  • 1/4 cup fine almond flour
  • 1 drop Pandan gel
  • 1/2 tsp sugar (or monk fruit sugar for healthy)
  • 1/4 cup Greek yogurt (for filling)
  • 1/2 cup almonds, finely chopped

Instructions

  • With baking mixer, whip up egg white meringues (about 7 minutes on high-medium speed). Add in monkfruit sugar or sugar.
  • Combine in almond flour and Pandan gel until consistent.
  • Pipe mixture on baking sheet into circles (or use a mini scooper and tamp down tops). If the batter is too moist, then add a little bench or any flour to tops.
  • Bake on 300°F for 12 minutes. Do not overbake. Tip: you can flip tops over to the bottom if edges begin to brown while the top isn't fully baked through. You can also use the top shelf of your oven to prevent burnt bottoms.
  • Let cool. Make top and bottom Whoopie pie sandwich with Greek yogurt and decorate with chopped almonds. You can substitute for any chopped nuts or crumbs.
