Waffle iron recipes and Sunday Brunch have a special place for me… and you too can make these easy waffles at home.
But I didn’t know that before I had a waffle iron.
Before that, over about a decade, I co-hosted group brunches at DC-area well-known places like Jose Andres restaurants, Le Dipomate, and Founding Farmers that have so much character and scrumptious plates!
And the funny part is that around those same years (when I was not in restaurant chair pose 😊 sitting as a diner), I was BUSY doing the event planning at neighboring restaurants. That took most my waking hours.
So I was around FOOD A LOT and all day… and that makes a foodie (someone who loves food) happy!

These days, I’m inspired to be on the other food side yet again.
This time around, at home I’m making waffle iron brunch recipes and not just consuming them… and adding to a food brunch table to celebrate.

That’s what I’m talking’ about for a lazy slow-start weekend morning where the food is tasty, quick, and easy! …Oh, and with healthier eating inspirations.
Frozen blueberry 🫐 is one of the anti-inflammatory foods that I can’t live without. And wildly great for brunch tables!
Blueberries sub in well in almost any sweet brunch recipe like a crumbly healthy buckwheat blueberry scone.
They’re also a no-brainer (and help to eliminate decision fatigue)… because you can’t go wrong with a bowl of wild blueberries. They’ll go sweetly with waffles any day!
And if you don’t have a waffle maker or waffle iron, I think you will not regret investing in one. They’re fairly low cost compared to other kitchen appliances.
It’s a time saver especially on weekends when you don’t want to turn on the cooktop and you want an easy brunch meal.
It heats up super fast… and voila! you have a sweet waffle AND waffle fries.
And it stores easily in a kitchen drawer or stacks upright and snug with cookbooks. No toaster can claim that. And it can do a toaster’s job I find.

You can turn your simple mash potatoes into these fun and tasty waffles (aka the new healthy hash browns!) 🧇 You can make to order and freeze the ones you don’t eat.
Frozen waffles can be brought out about an hour in advance and eaten at room temperature or re-heated. They’re best straight from the waffle iron when they’re most crisp.
Potato waffles pair also well with a healthy and tasty yogurt dip. You can get protein, carb, and veg all on one plate. 🍽️

Chicken-n-Waffles was a favorite on the menus in the dozens of foodie and fine-dining brunches I attended. This is a healthy home version that’s made off of Southern-style cooking vibes and you can make in minutes.

One-Bowl

Easy Waffle Iron Waffle In Minutes (Healthy Tips)
Equipment
- waffle iron I use a Cuisinart that I love.
Ingredients
- 1/2 cup milk per waffle
- 1 egg per waffle
- 1/2 cup combined flour (use more almond flour and some AP flour for healthier waffle batter)
- 1 tsp oil (can reduce oil of choice and use light EVOO for healthier version)
- Greek yogurt
- Berries (optional)
Instructions
- Add milk of choice to bowl or Pyrex measuring glass for easy measurement and one-”bowl” mixing.
- Add egg, flour of choice (combine almond flour and ap flour for healthy), oil.
- Pour in waffle iron maker and cook until golden-medium brown and is easy to remove in one piece with a fork.
- Let cool and dollop with Greek yogurt and fresh berrries.
No Egg Waffle Iron Brunch Waffles 🧇
Oat Blueberry Waffles - No Egg
Ingredients
- 1 tbsp blueberries, frozen
- 1/2 cup oats
- 1/2 cup milk or plant-based milk for dairy-free
- 1 tbsp whole wheat flour, plain flour, or gluten free flour
- 1 tsp neutral oil
Instructions
- Mix ingredients and add to your medium hot waffle maker. This is a liquid-y batter. Add more oats to fill in if it becomes too liquid in spots. This is a very forgiving recipe and great for lazy weekends!
- Cook for about 3 minutes or until easy to pull in one piece off the waffle iron with a fork.
- Flip the bottom for the top as often that's better cooked.
- For healthy version, dust collagen powder on top instead of powdered sugar.
Marshmallow S'more Dessert Waffle Iron Brunch Recipes
Ingredients
- flour
- neutral oil
- water
- mini marshmallows
- chocolate, chopped or mini morsels
Instructions
- Make two same-size waffles in your waffle iron (about 3 minutes on medium heat).
- On a plate, sandwich marshmallows and chocolate in between the two waffles while they are still hot. Use a plate to press down. Alternatively you can add the chocolates on top for a crunch.
