Apple Ambrosia with Grapefruit Dessert Bowl

Apple ambrosia is good year round. And it’s good for all ages and breakfasts!

It’s a refreshing bowl! And so simple. You don’t have to work hard to get a healthy bowl that’s tasty too!

Let the plant-foods do the heavy lifting. They just need to be grocery store sourced, selected, transported, and brought home that could be in under 30 minutes and some can be plucked from the garden if you’re a green thumb.

Like herbs that go great in an ambrosia. Mint in particular is a delightful pairing.

Grapefruit is one fruit that is a pretty pink color fruit but great for breakfast and an ambrosia fruit dessert. We called it a melange when I worked in hotel catering.

And reminds me of the experience I had I’ll never forget. I co-hosted brunches for several years at fine dining and nice DC metro area restaurants and hotels.

There was one bougie breakfast buffet I remember…

Because of the most memorable item on the table for me from the farmers table choice of decadence was the half grapefruits sectioned cut.

On the side, they came with special small shovel-looking spoons that had a sharp point to get into the juice without losing any of the juice.

The spoon also had jagged edges on both sides to swivel into the pulp smoothly. It was such a simple but divine experience.

Call me crazy… but it was the highlight. A juicy bite without hassle.

Because grapefruits are usually better handled in the back-of-the-house by the cutting board and sink.

But I was so impressed as a guest, and had never seen anything done so simply and yet elegantly highlighting a fruit so nicely.

And in my home’s kitchen, I pulled out a grapefruit and some fruit that would go lovely in a brunch bowl.

A pink grapefruit, a pink lady apple, and a banana… And apple ambrosia is one way to appreciate the grapefruit pulp and juice. Usually oranges are used, but any citrus will help the apples from browning and give a sweet-tart taste.

But if you prefer a classic orange, a pink orange (Cara Cara orange). I remember when those sweetheart oranges became popular during the pandemic. It was bittersweet at the time…

…but this type of orange that has sustained time IS the sweetest. it’s sweeter than a California navel if you need an orange for comparison.

This bowl has mint as an added bougie-vibe and coconut for a some pizzazz! 🎉

…And you can have a BONJOUR morning! 🍽️

The chopped apple bites are hidden at the bottom. And for soft food seekers like little ones and seniors, you can substitute the crunchy apples with applesauce, grapefruit, and banana and still keep the delicious pairing tastes intact!

This is the way to do brunch and breakfast dessert.

Apple Grapefruit Ambrosia Dessert

This Is a refreshing and healthy brunch dessert that's easy to prepare and good for all ages!

Equipment

  • 1 zester (optional)
  • serated knife

Ingredients

  • 1/2 Grapefruit
  • 1 Apple, medium
  • 1 Banana
  • 2-3 mint leaves
  • shredded coconut (for zhughing)

Instructions

  • Chop apples into small bites. Add to the bottom of a bowl.
  • Cut a grapefruit in half and squeeze. Then cut out the remaining parts and make small pieces to add to the bowl. Tip: use a serrated knife so you don't lose much of the juice or use a fancy grapefruit spoon shovel if you have one ;).
  • Slice up banana and add to bowl.
  • Add mint leaves and shredded coconut flakes. Zest with the grapefruit skin exterior.
