Lime sherbet with blackberry is a delicious pairing. And you don’t need any fancy equipment or an ice cream maker. This is a healthy low-sugar dessert.
You can make this refreshing blackberry lime sherbet with few special ingredients that you can find at the grocery store:
Blackberries – you can also substitute other berries like blueberries or raspberries. If you use strawberries, I suggest lemon as a divine pairing like described in this lemon trifle.
Dates – are anti-inflammatory and are loaded with vitamin, minerals, and fiber. They also add to the sherbet sweetness and improve the thicker texture. Without a food processor, you can use a serrated knife to finely chop the sticky dates. It has Vitamin K, B1, and B3.
Maple syrup – this is an anti-inflammatory sweetener with Vitamin B2. Some of the best maple syrups can be found in the Northeast U.S. and Canada. I like the Adirondack (upstate New York) ones.
Xantham gum – this is a natural ingredient and soluble fiber in many foods. Don’t let the “X” name scare you. It will help to thicken and prevent icicles from forming in the freezer.
Lime juice – most berries aren’t too sweet, so combining with a sour taste like limes will help bring out the sweet tastes from the natural sugars used in this recipe. Plus, lime is healthy with Vitamin C and B6, and can help digestion and prevent kidney stones.
Buttermilk – is a tangy milk and healthy option that will bring out the lime juice flavor. It has Vitamin A, B2, and B12. And milk is what makes the difference between a sherbet vs. sorbet.
Combining these ingredients, you get Vitamin B that all work together for healthy functions in the body.
And a deliciously refreshing sherbet dessert you can add to waffles or good healthy-ish desserts.
Lime Blackberry Sherbet
Ingredients
- 10 blackberries (fresh or frozen)
- 1 cup buttermilk (or low-fat milk)
- 2-3 dates, finely chopped
- 1 tbsp maple syrup
- 1 tsp xantham gum
- 1 tbsp lime juice
Instructions
- Smash unfrozen blackberries with a spoon into a bowl and pour in the buttermilk.
- Fully combine with all the other ingredients.
- Add sherbet to a freezer-safe container for at least an hour or longer before serving. Pull out at least twice and fully stir up as the sides may form icicles. The xantham gum and dates will help prevent icicles from forming but you will probably still see some icing around the sides. Alternatively, you can use an ice cream maker to freeze faster and leave a better, smooth sherbet consistency.
- Scoop out sherbet and enjoy! You can also zhugh with blackberries and mint leaves, and drizzle additional maple syrup and/or lime juice for individual preference.
