Almond cookie is a delicious cookie flavor that is so easy to make. And these cute-as-a-button biscuits are happy ones.

These almond cookies are almond-filled through and through starting from the flour powder (or flower power 🌼) to the flavor liquid and whole almonds.
Which btw, you can make your own almond flour. Blanching almonds with hot and cold water to slip the skins off is one way.
…Or you can buy almond flour that I do as I find it’s less expensive and it’s ready to go! Cost comparing can be your make or buy decision.
Either way, almonds are healthy super foods that are gluten-free. They are good protein sources and healthy fat.
They also have antioxidant Vitamin E, and minerals like calcium and magnesium that affect bones and sleep. We usually don’t get enough unless we’re purposefully looking to add the minerals to our diet.
Then for happy texture, a creamy fat like margarine works best for these cookies that will come out of the oven with a nice crunch and buttery flavor like store-bought cookies.
You don’t need a stick of butter for the same tasty effect.
And you can also save on the sugar.
So you can make these healthy-ish by adding less of it… and substitute white or brown sugar for natural sugars like honey or maple syrup.
You can use these as binders too so you need less sticky butter.
I used to add sugar like you see people add water to recipes, but I slowly weaned off of using any table sugar that has zero health benefits.
If you’re like me, too much sugar can make your skin crawl or irritate skin eczema. Not adding sugar helps to ensure you don’t tip the scales. And you’re being good to your teeth. 🦷
Natural sugars don’t have the same effect. And have positive effects, such as honey is good for moisturizing skin and relieving some chest congestion. That’s why you see honey in cough drops. And maple syrup is good for cooling (Pitta) which is the opposite of inflammation (heat).

Easy Almond Cookie - Cute as Buttons
Equipment
- piping bag
Ingredients
- 1/2 cup almond flour
- 1/2 cup all purpose flour (or wheat flour)
- 1/2 tsp almond extract
- 3 tbsp margarine or butter, room temperature
- 1 tbsp maple syrup (or honey)
- water
- sliced almonds (for tops)
Instructions
- Combine your ingredients. Let rest covered in the refrigerator for a few hours or overnight for best results. For tips on water: start with 1 tsp of water or a minimal amount of water, just until you get a soft paste texture.
- Add cookie batter to a piping bag and squeeze or pipe onto a cookie baking sheet. You can use a plastic bag and snip the corner off if you do not having a piping bag. You can also spoon out the batter or use a mini cookie scooper for same size round cookies.
- Add a sliced almond to each cookie for a button look.
- Bake on 325°F/165°C for 1bout 15 minutes, then flip the cookies upside down for another 2-3 minutes to lightly brown the tops.
