And well… sometimes we want something different. We know how tomato season is bonkers. Gardens can yield abundant vines of tomatoes toward end of summer and early fall in the Northern Hemisphere.

And we don’t have to eat pumpkin only in autumn fall cooler months. We have so many varieties these days.

Sage Pumpkin Pasta Sauce (No Tomatoes)

Ingredients

  • 1 15 oz can pumpkin, pureed
  • 1 lb pasta (macaroni or corkscrew)
  • white pepper, to taste
  • salt
  • almond milk, unsweetened
  • 1 tsp sage

Instructions

  • Cook pasta according to package instructions.
  • Pour out excess water but can leave small layer/amount of water. Add pumpkin. Stir in pasta with a wooden spoon and then start adding liquid (about 1/4 cup milk at a time) until creamy consistency is to liking.
  • Add white pepper and salt.
