So this healthy chocolate cake recipe is going to please young and older generations. And could be part of the happy memories you create today that doesn’t get forgotten. 🎉

Cake always holds a special place in my heart and I remember most cakes in my life. And for those sweet tooths out there, they probably do too! 🎂

This special healthy chocolate cake you can make and bake is timeless like the moon that will forever be with us. If you follow the steps, then you can appreciate up-close-and-personal, all the decorations (surface facets) like on a diamond ring. 💍

…I remember early on waaayy before the internet days, when we would go to a local open field to see the solar eclipse. We had on our special glasses that looked like the 3-D glasses we wore in movie theaters. Hmm, that sounds a lot like what we still do now.

Depending on how old you are, you may or may not remember those kooky paper glasses made of red and blue cellophane paper to make the movie theater movie come alive in 3-D like today’s virtual reality glasses.

…Such fun times remembered, and you can enjoy making this cake in that spirit. 🎉

You can also make this a full moon vanilla cake 🌕, but chocolate is more decadent and mysterious like the appearance the moon sometimes has once in a blue moon. 🌚

To give the up-close textures of the moon surface, this is more like a simple arts-n-craft project you can do one lazy afternoon.

And as interesting as all this may sound, it’s a healthy cake that’ll make everyone proud. If you want to transform your moon to a glossy finish, that’s easy too when you use a chocolate ganache frosting.

You don’t have to start over, just simply cover your moon with shiny melted chocolate (mixed with milk). And bring back some pearlies if you choose. It’s your mission. 🚀

Either way, you can get your anti-inflammatory polyphenol 🌈healthy food fill with spices and tea coloring that give the moon surface colors. And inside is pure cocoa delight where you can use unsweetened and unprocessed and/or 70% dark cocoa versions.

Total Eclipse Chocolate Cake of the Heart

  • scale (optional)

Ingredients

  • 1-1/2 cups combined flour (plain and gluten-free flours are good)
  • 1/3 cup sugar (healthy version)
  • 1 tbsp espresso coffee (optional)
  • 3 tbsp baking cocoa (70% dark cocoa for healthy)
  • 1 tsp salt
  • 1 tbsp white vinegar
  • 6 tbsp oil (coconut oil, or light EVOO for healthy)
  • 1 cup cold water
  • 1-1/2 tsp baking soda
  • 1 tsp baking powder
  • matcha powder, beet powder, and ginger powder and edible candy pearl (decorations)

Instructions

  • Combine ingredients. For two 8" pans, you'll want to double the ingredient amounts (e.g. 3 cups of flour). Bake at 350°F for 50-55 minutes or until a clean toothpick skewer comes out.
  • To give the moon look, use a tea diffuser or strainer to alternate decorate with color food powders (Matcha green tea, beet red, ginger yellow) in desired spots. You can add edible pearls randomly to represent the moon craters (that create Baily's beads effect for eclipse enthusiasts).
