This is such as easy way to make a fantastic cake or cupcakes for any occasion. It's so easy and the cleanup is quick. No whisk to clean. This will make 3-4 servings at a time.

Equipment

  • Magic bullet blender or any blender

Ingredients

  • 1 cup gluten flour (whole wheat or all purpose flour)
  • 3/4 cup milk or juice
  • 1 large egg
  • 1 Tbsp maple syrup (or honey)
  • 2 tsp light olive oil
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar or lemon juice
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • pinch of salt

Instructions

  • Add ingredients to Magic Bullet blender. Pulse a few times until dry and wet ingredients are combined. Stir a few times with a spoon to make sure all the flour is mixed in. The batter should be runny and a little thick (like pancake batter).
  • Pour into cake pan or baking vessel.
  • Bake at 350°F/180°C for about 20-25 minutes or until a toothpick comes out clean. Do not overbake. Let the cake cool before taking out of the pan.

Notes

Tip: If you use a cake pan, you can finely dust the pan with cinnamon (or a dry powder like cocoa or flour) and it will prevent the cake from sticking to the pan without needing baking spray or to grease the pan. Be sure to wait for the cake to cool down after baking so it's firmer, before taking out of the cake pan. This can safely take about 45-60 minutes as steam is trapped inside the moist and fine crumb cake that makes it melt-in-the-mouth good.
