Cardamom Cookie Christmas Trees

Cardamom cookie is one punchy spice delicious cookie. And they are so easy and fun to make with healthy ingredients.

These cardamom cookie trees here on this plate are even “frosted” with Greek yogurt with green plant-based Pandan gel.

The butter can easily be substituted with coconut oil or a neutral olive oil that are super foods.

So instead of unhealthy fat, you can make your cardamom cookies with healthy fat that’s good in a Mediterranean diet.

And they will turn out to taste delicious any time of year! 🌲

Also, instead of all white gluten flour where too much can be very inflammatory, you can add a mindful tablespoon of all-purpose flour and then use mostly gluten-free flour.

My favorite ones are almond and coconut flour that work for this cardamom cookie recipe…

If you choose to use a coconut oil, then lean into the coconut-y flavors and coconut flour.

And if you prefer a neutral oil taste then you can pair with almond flour.

You can’t go wrong with a cardamom cookie like this! You can add a tasty pairing with cinnamon spice and/or orange zest or flavoring.

As long as you can “glue” your cookie batter together with crumbly bits that you can put back together like building a snowman, then you’re good!

If you don’t want to add more oil for the sticking effect, you can also add a ‘lil water (like a tablespoon for starters).

Just a small trick so you can move on in your day! 😉

Healthy Christmas Tree Cardamom Cookies

Ingredients

  • 1 cup flour (coconut flour or almond flour and AP blend recommended for healthy)
  • 1/4 tsp salt
  • 1/4 cup cardamom
  • 1/2 cup softened butter or coconut oil
  • cinnamon and orange zest (optional for sweetness)

Instructions

  • Mix ingredients together to prepare cookie dough.
  • Form a disc and wrap in plastic. Let rest in refrigerator.
  • Roll out to about 1/4 inch thick.
  • Cut out tree shape or desired cookie shape.
  • Bake on cookie sheet on 350°F for about 12 minutes.
