Coconut cream is dairy-free so it's a good enhancement to a watermelon sorbet.

Instructions
Crush watermelon with the back of a spoon. Pull ice cream bowl for the ice cream/sorbet maker out of freezer is using. You can do this by hand also, but better with a maker. Tip: keep the ice cream bowl frozen in the front of the freezer overnight before you use so it's not too icicle cold or warm. Pull out the bowl at the time you will be making sorbet and turn machine on, so icicles don't form inside the bowl from room temp change that can prevent the machine from churning.
Add watermelon to bowl. Start churning with machine or mixing by hand.
Reserve the flesh solid white coconut cream for ice cream or other desserts. For sorbet, add the coconut clear liquid with some liquid white parts is fine into the ice cream/sorbet maker. This gives a smooth sorbet watermelon consistency.
Churn for about 10 minutes or until a smooth consistency.
