You can find fresh mussels at many seafood counters of the grocery store. Freeze any mussels you don't use right away or plan to use within a few days. Clean mussels. Steam in a pot with a lid for about 7-9 minutes on medium heat untill mussels open up. Discard any mussels that don't open. You can also use frozen mussels found in the frozen seafood section near the fish.
Cook the quinoa with package instructions usually about 15 minutes. Optional: add frozen peas to cook with quinoa. Add threads of saffron and spices (optional) to taste.
