Ingredients
1mango
16.9fl oz.coconut water
water
½limelime zest
crystallized ginger (for zhughing)
shredded coconut (for zhughing)
1/4cup lemon juice and blueberry puree
Instructions
For extra sweetness, use a honey mango. For coconut water, my favorite is the VitaCoco Pressed version that has a milky consistency but similar taste to the original or regular version. Blend mango and coconut water, blueberry, and lemon juice.until you get a smooth liquid puree consistency. Add water if too thick. Pour through a strainer into your drinking glass leaving at least 1/2 inch to the top. Add lime zest.
Freeze until solid.
Pour the rest of the coconut water ontop and let it flow down and around the mango-ice center piece that will form in the middle as it melts at room temperature.
