This is a low-sugar bread-like graham cracker cookie that you can enjoy when you have a sweet craving.

Ingredients
2cupswhole wheat flour (or combo with gluten-free flours)
1Tbspbutter, melted
1Tbsp coconut oil, melted
1egg white
2tspraw honey (wildflower honey recommended)
1tspbaking soda (optional)
1/4tspsalt
1tspcinnamon spice
Instructions
Combine ingredients until you get a stiff dough that doesn't break. Add additional egg white if needed.
Wrap in plastic and refrigerate for a few hours or overnight.
Roll out dough to about 1/8" and cut into rectangles. Add dimples (docking holes) with a toothpick or skewer. You can also make a bread-like graham cracker by rolling dough thicker (about 1/4").
Bake at 350°F/180°C for about 20 minutes (or until edges brown). For a more crunchy graham cracker, bake for additional time on lower temperatures. like 250°F/120°C.
