Egg White Breakfast Waffle Taco

This is one sweet healthy and delicious Sunday brunch waffle taco

Ingredients

  • 4 egg whites
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 small banana, cut into small, even pieces
  • Greek yogurt (whole milk)
  • 20 mini chocolate chips per waffle
  • melted chocolate (optional)
  • 1/2 small ripe avocado (optional)
  • strawberries, quartered

Instructions

  • Cook egg whites, flour, and butter on low heat until flour is dissolved into egg whites.
  • Let mixture cool.
  • Add to waffle iron or skillet and cook until golden brown. On a waffle iron on medium setting, that will be about 3 minutes.
  • When still hot, roll into a taco shape. You can use an upside down muffin tin and insert in between pan mounds so waffle holds its shape until cool.
  • Pipe Greek yogurt onto waffle and add chocolate chips. Add banana, strawberries, and avocado-melted chocolate mousse mixture.
