Cold Beet Cauliflower Soup (Rainbow)

- beets
- cauliflowers, cooked
- tricolor carrots (purple, yellow, and orange carrots)
- cherry tomatoes
- microgreen (arugula or alfalfa sprouts)
- crumbled goat cheese
- cumin
- salt and pepper
- lemon pepper (optional)
Cook carrots, beets, and cauliflower until soft. Let cool and add to a blender if serving cold soup.
Add blended ingredients to a bowl and garnish with the cheese, other veggies, tomatoes, and spices.
